Baked pepper with ricotta according to chef Andrey Salnikov’s recipe
Our new recipe is from the «guests are at the door» category. We asked Andrey Salnikov, chef of the Salama restaurant, to suggest something that can quickly surprise — and he proposed a gastronomic snack: baked pepper with ricotta.
Ingredients
Baked and peeled Dongan pepper or Ramiro pepper150 g
Ricotta cheese70 g
Sprouted mung beans10 g
Green onion (chives)2 g
Passion fruit syrup10 g
Balsamic vinegar10 g
Olive oil10 g

- Bake the pepper in the oven (approximately 200–220°C for 20–30 minutes) and peel it.
- Marinate in a sauce made of olive oil, passion fruit syrup, and balsamic vinegar.
- Place on a bed of ricotta mixed with homemade balqaymak.
- Garnish with sprouted mung beans.
